Back in my racing days I used those for porting and gasket matching heads and intake manifolds.

I'm assuming the burrs were for the porting and matching, but what about the stone sandy looking things? Are they for sanding and polishing?

The grind stones are for porting & matching or grinding metal. They are fine grindstones.
The burrs are for shaping wood or non ferrous items such as plastic.

Is there an official name for them besides grindstones? I can't find any ones like these, I can only find like the big wheels or small knife sharpeners.
